Kombucha is one of the most underrated cocktail mixers out there. It brings acid, texture, funk, fruit, tannin, and natural carbonation all in one pour. Used right, it does more than top off a drink. It gives it shape.

Each Noli South flavor has enough structure to carry a proper cocktail on its own. That means no syrups, no extra juice, no clutter. Just a good spirit, clean ice, and the right build. Here are four to get you started.

Gin + Rosemary Ginger

2 oz gin 5 to 6 oz Rosemary Ginger kombucha 1/4 oz fresh lime juice 1 fresh rosemary sprig Lime wheel to garnish

Light a rosemary sprig until it gives off a fragrant smoke. Capture that smoke in your glass for a few seconds. Add ice, gin, and fresh lime juice. Top with Rosemary Ginger kombucha and give it one gentle lift with a bar spoon. Garnish with a lime wheel and the rosemary sprig.

Bright and herbal up front, dry ginger heat on the finish, with just enough smoke to make it interesting. Somewhere between a highball and a garden cocktail, but better than either.

Bourbon + Blackberry Lavender

2 oz bourbon 5 to 6 oz Blackberry Lavender kombucha Lemon peel to garnish

Fill a chilled glass with ice. Add bourbon and top with Blackberry Lavender kombucha. Give it a quick, gentle stir. Express a lemon peel over the top and drop it in.

The bourbon brings warmth and weight. The blackberry gives dark fruit. The lavender hangs in the background and keeps the whole thing from getting predictable. Soft, deep, and dangerously easy to drink.

Tequila + Turmeric Mango

2 oz blanco tequila 5 to 6 oz Turmeric Mango kombucha 1/4 oz fresh lime juice Lime wheel or mango slice to garnish

Build over ice in a tall glass. Add tequila and lime juice, then top with Turmeric Mango kombucha. Stir once, gently. Garnish with a lime wheel or mango slice.

3 oz champagne or dry sparkling wine 4 oz Blueberry Acai kombucha A few fresh blueberries to garnish

Pour the sparkling wine into a flute or coupe. Top slowly with Blueberry Acai kombucha. Drop in a few fresh blueberries.
